To be honest, I am not that sure that people getting Macs are actually interested in installing Linux on them - even installing Windows seemed a "necessary evil" in their eyes for the most part - but if someone scores a REALLY good deal on an Intel-based Mac now that Apple will be phasing them out one by one... sure, why not?
As for the sunsetting of these Intel-based Macs, well, I'd say that 2025 may be generous. They may be around for simple, general day-to-day tasks, but actual professionals will have moved on to Apple Silicon WAY sooner than that by the look of things.
If Apple continues to offer noteworthy improvements in its hardware and optimize its software (macOS and its own apps) every single year, by 2025 we'll be at M4 or something and Mac Pros will be sporting 512-core APUs. A totally different market, this will be!
